  8. 4 Tbsp Dark Brown Sugar
  9. 2 Cilantro stalks - leaves and tops
  10. Black Pepper to taste - I like ALOT
  11. 2 tsp Dark Soy
  12. 2 Tbsp lime juice (can use lemon)
  13. For Grill / BBQ
  14. Leaves Fresh Lime
  15. For the Chilli Nam Jim Jaew Sauce
  16. 2 Tsp Dry Chilli Flakes
  17. 6 Tsp Fish Sauce
  18. 2 Tsp Caster Sugar
  19. Fresh Squeeze juice from 1 lime (can use 2 Tsp bottled if not available)
  20. 1 Tsp Palm Sugar (if cannot find use soft brown sugar or more caster)
  21. 1 Tsp Toasted ground sticky rice (optional)
  22. 2 Tsp Warm Water
  23. 1 Finely chopped top of spring onine (optional)
  24. Half Small red onion finely Sliced (Optional)

Instructions to make to make Thai Grilled Chicken - Gai Yang WOW !

  1. Put everything for marinade into a blender or Stand mixer and Blitz into a paste - then in a large bowl put chicken and coat stirring after 30 mins. Put into fridge (covered in Film Wrap) until ready to grill or overnight.
  2. 30 mins before you ready to serve take from Fridge and get the BBQ Ready - you can also do under the Grill (Broiler).
  3. Put the Chicken Skin Side down and then put the Line Leaves on top - I have a 2 sided BBQ Rack so it very easy to keep flipping or you can turn using Tongues.
  4. Keep turning ever minute to stop burning and so that the middle is perfectly cooked (I usually cut one thick piece to make sure ready). ONce cooked for me around 10 mins transfer to a carving board and let rest for at least 5 mins.
  5. When ready to serve Chop into Strips diagonally and serve while still hot. Truly AMAZING
  6. For the Sauce put all ingredients into a small ball and mix about 30 mins before serving - you can add more or less of anything to personal taste - I just like really SPICY :P - I put this sauce on Grilled chicken, Pork Beef just about anything.
